Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups Bomba or Calasparra rice
  • 4 cups chicken or seafood broth
  • 1 tsp saffron threads
  • 1 tsp smoked paprika
  • 1 lb jumbo shrimp, peeled and deveined
  • 1 lb mussels, scrubbed and debearded
  • 1 lb clams, scrubbed
  • 1/2 cup frozen peas
  • Lemon wedges, for serving

Instructions:

  1. Heat the olive oil in a large paella pan or wide, shallow skillet over medium heat. Add the onion, garlic, and bell peppers and cook until softened, about 5 minutes.
  2. Add the rice to the pan and stir to coat with the onion mixture. Cook for 1-2 minutes until the rice begins to toast and become slightly translucent.
  3. Add the chicken or seafood broth to the pan, along with the saffron threads and smoked paprika. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
  4. While the rice is cooking, season the shrimp with salt and pepper. Heat a separate pan over medium-high heat and add the shrimp, cooking for 1-2 minutes on each side until pink and cooked through.
  5. Once the rice is cooked, arrange the shrimp, mussels, and clams on top of the rice. Cover the pan with a lid or foil and cook for an additional 5-10 minutes, or until the mussels and clams have opened and the seafood is cooked through.
  6. Sprinkle the peas over the top of the paella and let them cook for 1-2 minutes until warmed through.
  7. Serve the paella hot, garnished with lemon wedges.
